Michigan Mashed Potato Waffle with Cranberry Bourbon
Relish & Smoked Turkey Breast -
Waffle mix
1# homemade Michigan mash potatoes
1 cup milk
2 eggs Michigan eggs, lightly beaten
1/2 cup unbleached flour
1 tsp baking powder
1/2 tsp sea salt, or to taste
1/2 tsp ground black pepper
combine mashed potatoes with milk until smooth in a large
mixing bowl--add eggs and blend until combined-set aside
sift together flour, baking powder, salt and pepper-fold into
batter
heat waffle maker
cook waffles as directed by waffle maker instructions-you
may need to cook longer than a regular waffle mix.
you can use them immediately or set aside and heat when
ready to assemble
They can be served as an appetizer by cutting into 4th’s
Cranberry bourbon relish
1 cup Bourbon
1/4 cup Minced shallots
zest of one orange
12 oz. Cranberries, fresh or frozen
1 cup Sugar
1 tsp grated fresh ginger
1 tsp ground black pepper
Combine in a stainless steel pan bourbon, shallots, ginger &orange zest. Bring to a boil, lower heat and simmer
until reduced to a syrupy glaze about 10 minutes--add
cranberries (if using frozen, defrost) & sugar-raise heat and
bring to a boil againcook over medium heat until cranberries start to burst.
This is quite savory--if you like a sweeter relish add sugar
to taste & cook longer
Assemble Waffles
top each triangle of warmed potato waffle with slices of
smoked turkey or roasted turkey & top with a spoonful of relish
ENJOY.
